TROUT ALMONDINE

1 cup fine, dry bread crumbs

1/4 cup sliced almonds

2 tablespoons butteror margine, melted

1/4 cup all-purpose flour

2/3 cup mayonnaise

2 Trout fillets

water

Heat oven to 350 F.  In a small bowl, combine crumbs, almonds, and butter. If necessary, add aditional melted butter, mixing well, just until crumbs hold together.  Coat fillets with flour, shaking off excess.  Place skin side down in a backing pan large enough to hold in a single layer.  Spead mayonnaise evenly over fillets.  sprinkle evenly with crumb mixture, lightly pressing into the fillets.  Carefully pour the water around the fillets to 1/8-inch deep.  Bake 20 minutes or intil fillets flakes when tested with a fork.
